This experiential dining society, is known for hosting high-style, multi-course dinners in secret locations with renowned and up-and-coming chefs. The tour, inspired by Netflix’s “Chef’s Table,” will tell the diverse American stories of our chefs through their dishes, each carefully selected to convey personally memorable moments from their life. The featured chef in Philadelphia is Michael Stuckey of Southern Way Catering, the premiere catering company of Columbia, South Carolina. “Part of Underground Kitchen is us getting to know our chefs personally – getting to know their hearts and souls and not just their heads and hands,” adds Sparks. “This tour is about our chefs telling their unique personal stories – from childhood to adulthood… sometimes tragic, more times triumphant – all prepared and plated in an intimate, evocative, community-connecting, no-holds-barred multi-course dinner.” Sounds like a great time to us!

Without Derek Timm in studio, the Small Bites crew were in a pickle so they decided to call upon Lee Lawley the owner of Delco Dills to help out and come in. Delco Dills – In a Pickle? Get it? Oh, nevermind. Delco Dills LLC is a small, family-owned pickle business operating in Collingdale, Delaware County PA. After much experimentation, a perfect combination of brine and ingredients produced a fresh and flavorful pickle that Lee along with his wife Elaine Lawley began to share with family and friends. An overwhelming and humbling response of positive feedback and support inspired them to continue in their pickle-making efforts and share the product with others. They began selling their product at local fairs and festivals and now can be found in local markets, pizza places, and restaurants in Delaware and Chester counties as well as a farmer’s market in New Jersey.

Then also joining in the fun will be Mike Ammirati of Ammirati Coffee who is based in New York and Enrico Marchionni who is the east coast sales manager for Toschi Vignola. Ammirati Coffee is a 56 year old family owned coffee importing & distribution company in the NYC area supplying the foodservice industry with some of the finest Italian products on the market today and they have partnered with Toschi Vignola. Toschi Vignola is a 75 year old family owned Italian company located just outside of Modena, Italy and Toschi specializes in flavored syrups, ingredients for gelato, sorbets, & confectionary, along with the world famous Amarena cherry to name just a few. Last, but certainly not least is Chris Parsons of Waffles4Tourette’s and Hobbs Coffee. Their product is the Liège sugar waffle which is popular in the streets of Brussels. They have been making the waffles at Hobb’s Coffee for the past five years as well as at the Swarthmore Farmers Market. Chris along with Marc Schmidt a neuroscience teacher and researcher at the University of Pennsylvania who founded Waffles for Tourette’s with an aim to produce these delicious treats from Belgium while also raising awareness for Tourette’s syndrome (TS), a fairly common tic disorder that is often misunderstood. A large percentage of their proceeds go to the national and local chapters of Tourette Association of America and they have donated over $11,000 since 2013. Something that tastes great with an even greater cause for good!

What a delight, or should I say a dream dining here. South Jersey has had a mix of Jamaican restaurants come and go. Some have been great. Some have been terrible. For one reason or another it has never really taken off like I assumed it would years ago. I don’t know why it took me so long to try Island Dreams Cuisine, but my guess would be that due to Donkey’s Place sitting right across the street I always just went there. Well I can say now I will be torn. Island Dreams Cuisine is one of the best Jamaican in South Jersey right now. It’s a tiny little place without much ambiance, but it’s the food that really matters and the food was delicious. I had a large jerk chicken with rice and peas and cabbage and carrots. With Donkey’s Place recently spotlighted on the New Jersey Bourdain Food Trail and a new throng of visitors dining there, I’ll know when the crowds are too large at Donkey’s, I can just walk across the street to still get a great meal.

This was a delicious comfort food meal. I had the Fried Chicken and Bacon Grilled Cheese topped with BBQ sauce. It was really good with fresh cut fries that were perfectly cooked and yummy. This place is certainly a guilty pleasure and service was friendly and quick.

When Celebrity Chef Robert Irvine said on Small Bites Radio that Chef Marcie Turney‏ is one of Philadelphia’s best chefs, I finally took notice. The name was familiar, and I was aware of the restaurant group that Chef Marcie and her partner Valerie Safran ran, and who knows why, but I had never been to one of them. Well I should be ashamed of myself. I like to call myself a foodie, and was missing a big portion of why Philadelphia is receiving so many accolades nationally due to our wonderful restaurant scene with Chef Marcie being one of the driving forces and reasons why.

I decided that my birthday would be a good excuse to make my first visit to one of Chef Marcie’s restaurants. If she is indeed that talented, then why not go during a time that should be celebrated and special. Well I can honestly say, she and her team did not disappoint in the least. The choice was made to dine at Bud and Marilyn’s. It was the chosen destination since I would have my 6 year old son join us, and the menu looked approachable for all palates. As soon as we stepped inside and saw multiple families dining there, I knew things were off to a good start.

From start to finish it was an impeccable experience at Bud and Marilyn’s. The décor is simple and tasteful. The service was flawless. The drinks were strong and mixed to perfection. The food was amazing, and dessert delectable. I can’t say enough of how much fun and how wonderful the meal was. Now don’t get me wrong, Bud and Marilyn’s will not be for everyone. We had American comfort food at its finest, and this type of cuisine is not for everyone. Chef Marcie does this style well, and I am now intrigued to try her other restaurants to sample her versions of Italian, Mexican, and Mediterranean. Give them try, and maybe you will become a fan of Chef Marcie like me and Chef Robert Irvine.

In studio we are ecstatic to be joined by Jessica Jenkins the Director of Marketing & Communications for FCM Hospitality. She will also chat about one of Philly’s favorite waterfront destinations Morgan’s Pier which is Philadelphia’s backyard beer garden. Morgan’s Pier is named after George C. Morgan, a construction worker on the Benjamin Franklin Bridge 85 years ago, who is credited as being the first person to cross the bridge. He defied his boss’ orders and shimmied across the wires before the deck was completed. Each season, Morgan’s Pier invites a different celebrated chef to take over the kitchen with their own version of a chef-hosted backyard barbecue, allowing a larger population of Philadelphia and its visitors to enjoy the casual cuisine while soaking up the outdoors and its scenery just steps from the Ben Franklin Bridge. Hailing from NYC, and with celebrity fans such as Denis Leary, we are pleased to have on New York City Fire Department (FDNY) Lt. John Sierp out of Ladder 8 in Tribeca with his newest restaurant endeavor Home Base Bistro in Murray Hill. The New York native boasts multiple cooking championships and has been featured on a variety of prominent television shows including Food Network’s CHOPPED, The Rachael Ray Show, The Martha Stewart Show and has even served as a judge on Throwdown with Bobby Flay. John’s acclaimed cooking embody’s the spirit of New York: diverse, progressive, and timeless. His latest cullinary endeavour, Home Base, is a collaboration with the rising entertainment connoisseurs at One Creative Marketing Group. Dubbed as an “American Bistro” the cuisine will represent a mix of John’s famous dishes and new boundary pushing menu items devised specifically for this restaurant.

Circling back to Philly and representing Philadelphia in season 12 of Ink Master: Battle Of The Sexes which premieres Tuesday, June 11th at 10 pm EST on Paramount Network Viacom we can’t wait to talk to Fon from Money & Ink Tattoo & Body Piercing Studio. This season, titled Ink Master: Battle Of The Sexes, features teams of male and female artists competing against each other in the ultimate battle for a chance to win $100,000, an editorial feature in Inked and the coveted “Ink Master” title. In addition, past contestants and fan favorites will return throughout the season to coach the teams in various challenges during the competition. Throughout the competition, the artists will be tested on their technical skills along with their on-the-spot creativity, as they must conceive and execute original tattoos on “human canvases.” Each episode will focus on a different and distinct style of tattooing and, as always, while the artists’ masterpieces will last a lifetime, so will their mistakes. Most recently, Ettore was with Davio’s Northern Italian Steakhouse as Vice President overseeing 10 restaurants for the last 18 years, and prior to that Ettore was with The Philadelphia’s Four Seasons Hotels and Resorts for 15 years. Memorial Day Weekend is right around the corner, so that means for many of us the Jersey Shore is on our minds again. Well we have Andrew Thulin the General Manager of Daddy O Hotel Restaurant and Hotel. Daddy O opened in April for the season and is a boutique hotel and restaurant with an incredible rooftop bar. Andrew wants everyone to know about the many new menu items and activities planned for the summer of 2019 in Long Beach Island.

Grand Canyon and Route 66 – 2019

Hualapai Ranch – Grand Canyon West – Western Rim – Peach Springs, AZ

Things started out at the Western Rim of the Grand Canyon. The top picture was at Guano Point and this is what you have to do to make sure your child doesn’t veer off and fall off the cliff while you get your picture taken. I didn’t take a picture of the food, but it should be noted. You will get corn on the cob, a salad bar, and roasted chicken if you get your meal at Guano Point. The ranch was a fabulously fun time and we stayed at the cabins on site which were clean and modern and I was happy we stayed overnight. I didn’t know what to expect, but the stay was fantastic. The staff and crew around the area were amazing and beyond friendly. There were tons of games and things to do for the entire family. The dinner on-site was ribs with steamed vegetables, a snack of fireside s’more at night, and the breakfast the following morning was scrambled eggs, bacon, and toast. If you have kids, this is a must to do while in the Grand Canyon area and staying overnight is well worth it.

El Tovar Dining Room – Grand Canyon National Park -Southern Rim – Grand Canyon Village, AZ

The El Tovar Dining Room is an elegant American restaurant inside the El Tovar Hotel with Grand Canyon vistas from some tables. Well we were lucky enough to be seated at one of the tables with a view. The view was stunning, service impeccable, and food was delicious from start to finish. I had the signature French onion soup gratinee, crab stack with lump blue claw crabmeat, diced avocado, red onions, diced tomato, fried onion, cilantro oil, and entrée was sautéed duck breast with blueberry compote, roasted red potato, and carrots.

Goldies Route 66 Diner – Route 66 – Williams, AZ

Goldies Route 66 Diner is a Casual throwback with 1960s styling offering classic American breakfast, lunch & dinner eats. Once again the theme of this post is me forgetting to take a picture of the food. I can tell you this though. Goldies Route 66 Diner was as good as any famous Jersey or Philadelphia Diner around. I don’t think I’ve ever had a better diner experience outside of Tri-State area. I had delicious marbled rye bread, with over easy eggs, and fried potatoes. The décor is exactly what you want to see and done tastefully with a nice gift shop area, and service was down home and bubbly while being extremely affordable. The town itself is cool to explore as well to spend the day.
