#SmallBitesRadio has been named #14 out of Top 30 Best Hospitality Shows on the planet for 2020. We are thrilled about the news.

D and L Coffee Service Inc. presents the #1 listed “Food Radio show Philadelphia” and #1 listed “Food Radio show South Jersey”, Small Bites with Donato Marino and Derek Timm of Bluejeanfood.com on Wildfire Radio returns this Sunday, February 23rd at 635pm with a FANTASTIC lineup!

Netflix is going to have a SOUTH PHILLY flair beginning on February 28th. So to prepare you to Netflix and Chill we are happy to welcome and talk to Chef Nick Liberato from Bravo “Top Chef Masters” and Spike TV’s “Bar Rescue,” as he will be part of a new show called “Restaurants on the Edge”. The 6-episode premiere season takes viewers to some of the world’s most spectacular locations: Visit Malta, Hong Kong, Tobermory, Ontario, Visit Costa Rica – The Costa Rica Tourism Board, Austria, and Travel Saint Lucia on the edge – mountainsides, water, white beaches, and despite their outstanding views, need a push to live up to their magnificent views. “Restaurants on the Edge” is a premium lifestyle docuseries that invites viewers into some of the world’s most stunning locations, with the team of experts, Restaurateur Nick Liberato, Dennis The Prescott, and Interior Designer Karin Bohn as they not only transform the restaurants, but the owners’ outlooks as well. To do this, the close-knit, light-hearted team tap into the soul of the restaurant’s surroundings and communities, incorporating local tastes, flavors, and textures – remodeling in a way that is uplifting and sets the reinvigorated business and owners up for future success. Rising from humble culinary beginnings, to working at local food stands in South Philadelphia growing up with his family in the Italian Market, by age 11, Nick discovered his second love – surfing and snowboarding. Combining the two passions, Nick followed his love and while working at a local surf shop on the west coast, started his own catering company – Calidelphia – that led to him preparing meals for top celebrities including Will Smith, Tom Hanks, Beastie Boys, Barbara Streisand, Anthony Kiedis Red Hot Chili Peppers, Cher, Hank Azaria, and more. It was through a connection with Michelin-starred chef and restaurateur, Chef David Myers that Nick learned he needed to truly dive into every aspect of the business in front and in back of house to become a true restaurateur himself, and that’s just what Nick did. In just a few years, Nick’s catering business began to thrive and he acquired the long-time Visit California Venice Chamber of Commerce fixture, the The Venice Whaler. Struggling to move forward prior to Nick stepping in, he took the business at the Venice Whaler from a mere $300,000 in yearly sales to a whopping $4 Million in sales. Leading the charge as Executive Chef, Nick made a similar move with The Pier House, and continues to acquire, consult, and invigorate other businesses throughout Los Angeles and internationally with his expertise.

Then we are thrilled to have join us Alex & Stavros Vasiliadis the owners of Bodega Bar & Kitchen one of the newest and hottest dining destinations in Midtown Village Philadelphia Center City District. Bodega is a first-of-its-kind stylish, lush, intricate and colorful new restaurant, bar and live entertainment venue that is ready to dazzle with a tantalizing blend of Latin-inspired cuisine, unique hand-crafted cocktails, and live upbeat music. Then add Bodega’s all-scratch menu which features an eclectic array of contemporary cuisine with Latin inspired fare, blended together with Middle Eastern and Asian influences with a wine program designed by GM Patrice Caron and interior design for Bodega done by Linear A Design Group now you can see why everyone is talking about this place.

The hospitality business can be brutal. Sometimes it can be downright cutthroat. Joining us will be Maria Campbell the Founder of Cooks Who Care to let those in the field know that support is out there if you need it. They offer healthy industry connection opportunities, leadership training, career services, development tools, mentors, outlet share thoughts and ideas, and an all-encompassing support network. To top it all off, Cooks Who Care now has health insurance information and they want to share the exclusive plans they’ve researched that will especially support business owners, individuals, families, part-time workers, and small businesses with less than 50 employees and you can compare plans.

Returning to the studio for more fun and updates around the area will be Mark Matthews who is the Wizard of Oz behind the keyboard on one of South Jersey’s most popular blogs 42 Freeway that was spotlighted by Philadelphia Inquirer. If there is something going on in South Jersey there is a good chance Mark has a pulse on what is happening with the who, what, why, and where. Whether it is a new restaurant, store, road change, or closures Mark has been the first to break these types of stories many times and has become an authority and the go to voice for many in the community.

Still feeling love from Valentine’s Day and want to hear a love song? Looking for that live entertainment that will WOW the crowd? Well Patrice Hawthorne Music of Patrice & The Show has you covered. Patrice Hawthorne joins the fun with a special message for #SmallBitesRadio and we will play her version of Darling Forever.

Looking for something to eat, well as the saying goes we have an APP for that. As on the show will be Steve Mangano who designed CurEat to be an app where only positive recommendations of independent restaurants could be shared, which is one of the reasons why it has been a hit with so many restaurant owners and chefs. He specifically designed the app’s features in such a way as to minimize the toxicity that permeates so many reviews, and to be truer to the way people recommend restaurants to their friends in real life. In fact, many of the top users of the app are independent restaurant owners.

Last, but certainly not least, HE’S BACK! We get an update from Glenn Gross of Fat Jack’s BBQ to talk about what he has been up to and the recent Grand Opening of his restaurant in Williamstown, New Jersey on the Black Horse Pike next to RUSH Fitness and ALL PRO Baseball and Softball Academy.

What a nice treat this restaurant was. The décor is stylish and modern, and service was really friendly. All of the food ordered was delicious and priced very reasonably. I had the steamed dumplings, grilled pork chops with white rice, and the house special Padkee Mao Xa Xiu with shrimp, fishball, squid, chichen, and pork. For a decent priced Vietnamese restaurant that is a good choice if going to dinner and movie in the same shopping mall, I would go back.

He has the most wins of any comic club captain in the 119 year history of the Mummers Parade with 16 first place prizes and was also inducted into the Philadelphia Mummers and Shooters Hall of Fame in 2016 at the MUMMERS MUSEUM.

D and L Coffee Service Inc. presents the #1 listed “Food Radio show Philadelphia” and #1 listed “Food Radio show South Jersey”, Small Bites with Donato Marino and Derek Timm of Bluejeanfood.com on Wildfire Radio Podcast Recording Studio this Sunday, October 6th at 635pm EST with a stellar lineup and special co-host John Howard-Fusco.
We are happy to welcome Jordan Zucker, a University of Pennsylvania graduate to talk about the first of its kind cookbook harmonizing food, wine, and sound “One Dish – Four Seasons: Food, Wine, and Sound – All Year Round” from Home Sauce Publications. The cookbook is a thoughtfully laid out family collaboration and sophisticated labor of love. Zucker also known as the ringleader for the modern female sports fan (who hosts A Girl’s Guide to Sports, appeared on Food Network’s Grill It! with Bobby Flay, and was a recurring character on the popular TV series Scrubs) takes a base recipe, and by varying seasonally available ingredients, creatively builds four versions of each dish (with help from her expert cook mom): for winter, spring, summer and fall. Then the dish goes from good to great when matched with a complementing wine (with suggestions from her former- sommelier dad) and hip tunes. Jordan also has a book signing at University of Pennsylvania Bookstore Barnes & Noble on Monday, October 14th at 6pm.
Then we are thrilled to welcome Daniel Leader the pioneer from Bread Alone Bakery, who revolutionized American artisan bread baking to talk about his new book with Lauren Chattman called “Living Bread: Tradition and Innovation in Artisan Bread Making” from Avery Publishing of Penguin Group (USA). At twenty-two, Daniel Leader stumbled across the intoxicating perfume of bread baking in the back room of a Parisian boulangerie, and he has loved and devoted himself to making quality bread ever since. He went on to create Bread Alone, the now-iconic bakery that has become one of the most beloved artisan bread companies in the country. Today, professional bakers and bread enthusiasts from all over the world flock to Bread Alone Bakery’s headquarters in the Catskill, New York to learn Dan’s signature techniques and baking philosophy. Living Bread provides a fascinating look into the way artisan bread baking has evolved and continues to change–from wheat farming practices and advances in milling, to sourdough starters and the mechanics of mixing dough. Influenced by art and science in equal measure, Leader presents exciting twists on classics such as Curry Tomato Ciabatta, Vegan Brioche, and Chocolate Sourdough Babka, as well as traditional recipes. Sprinkled with anecdotes and evocative photos from Leader’s own travels and encounters with artisans who have influenced him, Living Bread is a love letter, and a cutting-edge guide, to the practice of making “good bread.”
Also joining in on the fun will be John Stewart the owner and Executive Chef of Kitchen 519 a standby for American comfort food prepared with local ingredients in a cheerful, art-lined space in Glendora, New Jersey. A former mechanics garage has been transformed with high ceilings, eclectic design, and lots of flair giving Kitchen 519 a feel not found around the area. The menu is constantly evolving and innovative with a focus on fresh and sustainable always trying to give back to the community while still being affordable for all to come out and dine.
Last but certainly not least is Michael Gabriele to talk about his fourth book on New Jersey history “Stories from New Jersey Diners: Monuments to Community” from American Palate The History Press Arcadia Publishing documenting colorful stories from the Diner Capital of the World. Michael is a graduate of Montclair State University and has worked as a journalist, freelance writer, diner blogger for Jersey Bites, and author for more than forty years. He is a member of the board of trustees for the annual New Jersey Folk Festival at Rutgers University and a member of the executive board for the Nutley Historical Society and serves on the advisory board of the Clifton Cultural Arts Center. Diners are where communities across the Garden State go to celebrate milestones, form lifetime bonds and take comfort in food. Daily life at the counter or in the booth inspires sentimental recollections that reflect the state’s spirit and history. Late-night eats fueled Wildwood, New Jersey wild rock-and-roll days. An entrepreneur traveled eight thousand miles from India and opened a diner in Shamong, New Jersey. From an impromptu midnight wedding in an Elizabeth lunch wagon to a Vietnam veteran sustained by a heartfelt note from a beloved Mount Holly Township NJ waitress, these are true tales from the soul of New Jersey.
