This experiential dining society, is known for hosting high-style, multi-course dinners in secret locations with renowned and up-and-coming chefs. The tour, inspired by Netflix’s “Chef’s Table,” will tell the diverse American stories of our chefs through their dishes, each carefully selected to convey personally memorable moments from their life. The featured chef in Philadelphia is Michael Stuckey of Southern Way Catering, the premiere catering company of Columbia, South Carolina. “Part of Underground Kitchen is us getting to know our chefs personally – getting to know their hearts and souls and not just their heads and hands,” adds Sparks. “This tour is about our chefs telling their unique personal stories – from childhood to adulthood… sometimes tragic, more times triumphant – all prepared and plated in an intimate, evocative, community-connecting, no-holds-barred multi-course dinner.” Sounds like a great time to us!

Without Derek Timm in studio, the Small Bites crew were in a pickle so they decided to call upon Lee Lawley the owner of Delco Dills to help out and come in. Delco Dills – In a Pickle? Get it? Oh, nevermind. Delco Dills LLC is a small, family-owned pickle business operating in Collingdale, Delaware County PA. After much experimentation, a perfect combination of brine and ingredients produced a fresh and flavorful pickle that Lee along with his wife Elaine Lawley began to share with family and friends. An overwhelming and humbling response of positive feedback and support inspired them to continue in their pickle-making efforts and share the product with others. They began selling their product at local fairs and festivals and now can be found in local markets, pizza places, and restaurants in Delaware and Chester counties as well as a farmer’s market in New Jersey.

Then also joining in the fun will be Mike Ammirati of Ammirati Coffee who is based in New York and Enrico Marchionni who is the east coast sales manager for Toschi Vignola. Ammirati Coffee is a 56 year old family owned coffee importing & distribution company in the NYC area supplying the foodservice industry with some of the finest Italian products on the market today and they have partnered with Toschi Vignola. Toschi Vignola is a 75 year old family owned Italian company located just outside of Modena, Italy and Toschi specializes in flavored syrups, ingredients for gelato, sorbets, & confectionary, along with the world famous Amarena cherry to name just a few. Last, but certainly not least is Chris Parsons of Waffles4Tourette’s and Hobbs Coffee. Their product is the Liège sugar waffle which is popular in the streets of Brussels. They have been making the waffles at Hobb’s Coffee for the past five years as well as at the Swarthmore Farmers Market. Chris along with Marc Schmidt a neuroscience teacher and researcher at the University of Pennsylvania who founded Waffles for Tourette’s with an aim to produce these delicious treats from Belgium while also raising awareness for Tourette’s syndrome (TS), a fairly common tic disorder that is often misunderstood. A large percentage of their proceeds go to the national and local chapters of Tourette Association of America and they have donated over $11,000 since 2013. Something that tastes great with an even greater cause for good!

Sitting at the doorstep of Rittenhouse Square from Aimee Olexy and Stephen Starr is The Love. It is a beautiful dining destination with a warm ambience. With impeccable, personable, and friendly service they shined throughout service. Each meal was explained and served with care. So you ask what about the food? Well that’s where they definitely showed THE LOVE. I enjoyed the meal as everything was delicious and would certainly return. Pictured is:

Summer Corn Soup with coconut milk, lemongrass, miso, crispy rice noodles, and togarashi spice and this was the highlight of the meal. REALLY GOOD!

Love Bird which is buttermilk fried chicken over comeback sauce, buttery Georgia grits, braised collard greens, and a side of steak fries.

Going from jars to things in bottles we will have on Wesley Narron the Chief Wine Ambassador for City Wine Tours Philadelphia. City Wine Tours recently started running walking wine tours around 3 Philly neighborhoods. On their tours you’ll go to the heart of a neighborhood, sample delicious wines, taste contemporary cuisine and discover great restaurants. Each neighborhood is different, but you’ll drink good wine and have fun on every tour. Each tour will visit two stops, and sample 6 different wines. Sounds like fun to us.

The BBQ game is just getting better and better around the Philadelphia/South Jersey area. This is a tiny little spot, but a nice diverse menu with a good choice of specials daily. I had the 3 meat platter with ribs, pork, brisket, beans, mashed potatoes, and corn bread. The brisket and pork were a highlight. The brisket was some of the best around and the pork had a Latin sort of flair to it with its seasoning which was a nice touch. The corn bread was a surprise as well as usually I am not a fan, but their version is delicious and closest to a muffin that is moist, silky smooth, and yummy with real pieces of corn throughout. They are a welcome addition to the wonderful Collingswood dining scene.

Situated on the Pacific Coast with a black sand volcanic beach front dining view is Olor de Mar at Palo Verde Hotel from Chef Carlos Burgos. If ever in the area, this is a must stop and stay destination and somewhere you can watch surfers catch some waves or take a surf lesson and do it yourself. Pictured is Ensalda Extrema with snapper carpaccio, Snapper Pargo Verde, and traditional pizza. As with many places around the world, the majority of El Salvador gets a bad rap, but this area is a tropical paradise with some of the friendliest people you’ll ever meet. You could even brush up on your Spanish or try to learn it from scratch while attending lessons right at the hotel with Spanish School El Zonte instructors. Travel the world and find out for yourself. It is what is inside each other that matters, not what politics tell you.

My oh my, what a beautiful renovation at The Bourse Food Hall. So many choices and only so much I can eat at one time. Well you’re getting a 2 for 1 deal on this week’s post. You get two different food vendors in one post. For the price you pay to read this blog, that’s a steal. Let me start with the one I really enjoyed. That would be Freebyrd’s Nash-Vegas Honey Hot Chicken Sandwich with slow roasted pulled chicken, honey hot sauce, and beer mustard braised onions on a soft roll. It was delicious and devoured in seconds. I will definitely give them a repeat visit and try some of their other offerings. The other selection was from #getfried fry café with their Oh Canada Poutine with bacon topping. I’ll say I’ve had worse and I’ve had better. They have quite a selection of different things to try fried so I recommend you try them and let me know.

At first I wasn’t sure if I was in the right location when I walked through the doors of El Manantial as you enter into a nice Mexican Tienda and have to walk through to find your way to El Manantial. Once inside El Manantial it is quite a sight to be seen. This is sensory party for the eyes and you can see they are setup for some fun at night. They have specials every day for discounts and things going on which is nice. The food was pretty darn good as well and a large menu to choose from. I had 3 Mexican tacos of bistec, carnitas, and barbacoa which were a decent value, tasty, and filling.

Memorial Day Weekend is right around the corner, so that means for many of us the Jersey Shore is on our minds again. Well we have Andrew Thulin the General Manager of Daddy O Hotel Restaurant and Hotel. Daddy O opened in April for the season and is a boutique hotel and restaurant with an incredible rooftop bar. Gordon Ramsay Hell’s Kitchen – Caesar’s Palace – Las Vegas, NV

With the announcement that future Hell’s Kitchen seasons will be shot on location at his restaurant and filming done at a sound-stage at Caesar’s Palace in Las Vegas, I figured why not stop by the Vegas Strip location. Chef Gordon Ramsay was in and around the area as they are currently filming, so it was interesting to see the setup and how the staff were doing. The ambiance is top notch and they make you feel as though you are in the middle of the show without being cheesy or cheap. I was lucky enough to be seated right in front to get the feel of being in the kitchen and observe all the action going on. The service was impeccable from start to finish, and food was awesome. I had lobster risotto, pan seared scallops, Caesar salad, beef wellington, and an AMAZING sticky toffee pudding.

Chart House – Golden Nugget – Las Vegas, NV

Situated on the extremely eccentric and eclectic Fremont Street where anything you can imagine, you just might see in person, is Chart House inside the Golden Nugget. The setting of the restaurant is absolutely stunning with a 75,000 gallon aquarium surrounding the dining area. From start to finish I was impressed with the meal. The service was perfect and personable, and the food was delicious. I had the lobster bisque, calamari with fired veggies and a side of kimchi sauce that was to die for when added to the appetizer, grilled octopus, and a Chart House prime rib with a side of king crab legs and an order of sautéed mushrooms.

Sam Woo BBQ – Las Vegas, NV

Sam Woo BBQ is a favorite for Hong Kong-style Chinese foods in a casual, no-nonsense setting on the famous Spring Mountain Road in the Chinatown section of Las Vegas where you can get any Asian delight your heart desires. We were treated like family and service was friendly and efficient during our visit. I had the BBQ platter which was roasted duck, roasted pork, and bbq pork and also had their Mongolian Beef and shrimp fried rice. The duck was REALLY good and the both pork items were delicious as well. The Mongolian Beef was tasty. The shrimp fried rice was nice. Only thing I would ask for would be for larger shrimp my shrimp were too tiny and they could have been cooked a little more and seasoned better.
